Hummus, Avocado, and Egg Toast | Dev's Journey

I stumbled across the idea for this delicious little breakfast gem on Pinterest somewhere a while back, and finally decided to give it a whirl last week.  Now I am in love with this delightful little hearty treat; it’s the perfect addition to my mornings after having my daily green smoothie.  The creaminess and garlic flavor of the hummus goes surprisingly well with the egg-avocado-tomato combo; it also helps to add some protein to this little breakfast, and make it more filling and satisfying at the same time.

As this is more of a “how to construct” type of recipe (the photo and article title pretty much explain it all), the directions and quantities listed below are a bit general:


Makes 1 Hummus, Avocado, and Egg Toast

What You Will Need

1 piece of toast, of your preference
1 heaping spoonful of homemade hummus
1/4 ripe avocado, sliced
1 fried egg (I cook mine in coconut oil, and prefer it over-easy so I can break the yolk)
Salt and fresh-cracked pepper, to taste
1/4 cup tomato, diced
1/8 cup scallions, sliced


Spread the hummus evenly over the toast, then layer the remaining ingredients on the toast in the order listed above. Serve immediately.

I also suspect this would be equally good with scrambled or poached eggs, if you prefer!
